New to the Cochrane culinary scene last November, Community Flatbread Co. really is all about community. When COVID-19 struck, restaurants were among the hardest hit businesses. But co-owners Rob Filby and Chef Ralf Wollmann weren’t going down without a fight. When the restaurant was shuttered back in March, they put their heads together to find new ways to serve their constituents.
Meals on wheels
They brainstormed with their distributor, Pratts Food Service and decided to set up a delivery service. If patrons couldn’t come to the restaurant, they would come to them. The idea was to keep the community well provisioned during the height of self-isolation and ease the burden on front line workers in grocery stores. Almost immediately after they launched the new plan, they received 300 email inquiries and 75 requests for orders – for everything from fresh produce and perogies to high quality meats (sirloin steaks, pork cutlets, ground beef, and bacon), salmon, and even chicken fingers.
Fired up
The restaurant at 185 1st St E is once again open for business, following all health and safety guidelines. Try a fabulous flatbread like the “Chicka Boom – house-seasoned, slow-cooked, free-run chicken with roasted red peppers, shaved onions and mushrooms, finished with a sriracha honey sour cream dressing.” Now that’s a mouthful!
Watch the chefs make each flatbread from scratch and bake in their oversized wood-fired oven. Lots more menu items to choose from including nine different pasta dishes and delicious-nutritious salads with house-made dressings. Paired with just the right vintage or brew. Perfection.
